Crispy Medu Vada in 15 minutes without any soda



Medu Vada is a South Indian fritter made from Urad daal (Split Black Gram Lentil). It is usually made in a doughnut shape, crispy from outside and soft from inside. It is a popular item of South Indian cuisine and is generally eaten as a breakfast or lunch.It is commonly served with Coconut Chutney and Sambar (lentil and vegetable soup). This recipe of Medu Vada is quick and easy which takes only 15 minutes and is without any kind of soda.

Prep.time: 10 minutes
Cook time: 5 minutes

Ingredients for Medu Vada:

1 cup soaked Urad Daal ( soak it for 4-5 hours)
1/4 cup Onions (finely chopped)
2 Green chilies (finely chopped)
3-4 Curry leaves (finely chopped)
1/2 tbsp.salt (as per taste)
1/2 tsp.of Cumin powder (Jeera powder)
Oil for frying

Recipe for Medu Vada:

  • Drain off all the water from daal.
  • Grind soaked daal finely in a blender, if needed add only 2-3 tbsp.of ice cold water while grinding.
  • In a mixing bowl add onions, green chilies, curry leaves,salt and cumin powder to the daal.
  • Aerate/beat the batter in one direction for 2-3 minutes as fast pace to accommodate air in it.
  • Check the consistency of the batter, drop a pinch of batter in a ice cold water, if it floats then your batter is perfect for vadas.
  • Apply water to your hands and take a portion of batter in your hands flatten it little bit and make a hole in the center of it, giving the doughnut shape.
  • You can also use banana leaf or any plastic sheet if you do not want to shape it on your hands.
  • Now slowly add vadas in the frying pan on a medium flame.
  • Fry them until turns golden brown.
  • Serve them hot with Coconut chutney or Sambar.

Quick Tips:

  1. Do not add too much water while grinding the daal as it will make your batter thin and your vadas wont get the shape.
  2. If in case your batter gets thin, you can add little bit of Semolina/Rava in it to adjust the consistency.
  3. Fry them on medium flame so that they get cooked from inside.
  4. The reason of hole that we make in the center of vadas is so that the vadas can be cooked equally for inside and outside.
