Pav bhaji- Street style





Pav Bhaji is a famous street side dish in all over India but is originally a Maharashtrian dish. Pav are also known as dinner rolls and bhaji is a Marathi word for dishes made from vegetables. As, both the pav and bhaji served together and compliments each other , hence, the dish name is Pav bhaji. I have not added any food colour to this recipe as I feel food colours are not healthy. Try this recipe and you will find the same street style taste from Mumbai.

Ingredients for making bhaji  : (serves 6)

1 large onion or 1 cup- finely chopped
6 medium size tomatoes- puree 
1/2 cup of cauliflower
1 medium size potato
1/2 cup of green pepper (capsicum)
1 small beetroot (gives nice colour to bhaji)
1/4 cup of green peas
3 tbsp. of garlic paste
2 tbsp. of ginger
1 tbsp. red chilli powder or to taste
salt to taste 
3 tbsp. of Pav bhaji masala ( MDH tastes better)
4 tbsp. of butter (add more if you like)
Cilantro/Coriander for garnishing 

Recipe for Pav Bhaji:

  • Add all the vegetable in a pressure cooker with 1/4 cup water and wait for 2 whistles.
  • Once all the pressure from the cooker is released mash all the vegetables and keep it aside. 
  • On the other side add butter to a pan on a medium flame.
  • Now turn flame to high and add onions.
  • Sauté onions till you achieve pink colour then add ginger, garlic paste to it and sauté for 5 minutes. 
  • Next, add tomato puree and sauté for 10 minutes on a medium flame.
  • Then add all the spices and saute 5 minutes.
  • Add all the mashed vegetables into it and mix nicely with everything.
  • Garnish it with cilantro and chopped onions.
  •  Voila ! Your bhaji is ready.
  • Squeeze lemon into it before serving and top it with butter.
  • Enjoy it with pav.

Quick tips:

  1. Cooking vegetables in a pressure cooker is just a way to save time, another way to do is add finely chopped vegetables into mixture and then mash it along with cooking.
  2. Add lemon to bhaji before serving, it taste awesome, but not before that as it might spoil your bhaji.
