Pav Bhaji is a famous street side dish in all over India but is originally a Maharashtrian dish. Pav are also known as dinner rolls and bhaji is a Marathi word for dishes made from vegetables. As, both the pav and bhaji served together and compliments each other , hence, the dish name is Pav bhaji. I have not added any food colour to this recipe as I feel food colours are not healthy. Try this recipe and you will find the same street style taste from Mumbai.

Quick tips:
- Cooking vegetables in a pressure cooker is just a way to save time, another way to do is add finely chopped vegetables into mixture and then mash it along with cooking.
- Add lemon to bhaji before serving, it taste awesome, but not before that as it might spoil your bhaji.
