Potato and Cheese Puff Pastry





Puff Pastries are crispy,flaky and light weight pastries made of thin composed dough made from butter and all purpose flour. These Potato and Cottage Cheese Puffs are also known as Patties in India and are one of the favorite tea time snacks.I have used frozen puff pastry dough in this recipe to save time and make it easy. 

Time Duration:

Prep.time: 10 minutes
Cook time: 15-20 minutes

Ingredients for Potato and Cheese Puff Pastries: (serves 6 ) 

1 pack of frozen puff pastry dough 

Ingredients for filling inside puff pastry:

1 cup of Mashed potatoes 

1/2 cup of Cottage Cheese (shredded or crumbled)

1/2 tbsp.of salt (as per taste)

1 tsp.of Cumin powder (Jeera powder)

1 tsp.of dry Mango powder (Aamchur)

1 tbsp.of Green chilies (finely chopped)- optional

2 tsp.of Coriander powder (Dhaniya powder)

1/4 cup of Onions (finely chopped)

3 tbsp.of green peas- optional

Recipe for Puff Pastries: 

  • Before making puff pastries from frozen dough, put dough outside the freezer for 4-5 hours and let it thaw or become soft to roll.
  • Once it is soft, roll it with the rolling pin by sprinkling some all purpose flour (maida) on it.
  • Roll it thin, around 1 mm.
  • For filling: In a mixing bowl add mashed potatoes, cottage cheese, onions, peas and all the spices together and mix nicely. 
  • Now cut the dough with the knife or pizza cutter into squares for giving them desired shapes.
  • In the mean time, preheat your oven at 180 degree C.
  • Add filling into the puff pastry sheets and fold them nicely.
  • Apply water on the corner of puff pastry sheets to seal them.
  • Place them on non stick baking tray or pizza tray.
  • Brush the puff pastry with milk.
  • Put them in oven for 15-20 minutes or until turns golden brown.
  • Keeping checking in between and take it out once done.
  • Let them stay on tray for 5 minutes before you serve them.
  • Enjoy with your choice of sauce !

Quick Tips:

  1. Do not over heat your oven , this won't let your puff pastry to fill air in between the sheets and become crispy.
  2. If your Puff Pastries are not done from the bottom, you can flip them and bake them again for 5 minutes.
  3. If you don't have non-stick baking tray, put butter paper/parchment paper on tray before placing puff pastries.
