Potato Croquettes


These Potato Croquettes are simple classic dish which goes as an appetizer or as a snack. The perfect combination of Crispy outside and soft inside. In this recipe I have also added cheese in it as most people love cheese but it is completely optional which can be skipped and it won't affect the taste much.

Prep.time:   5 minutes
Cook time: 10 minutes

Ingredients: (serves 4)

3 large potatoes- shredded 
1/4 cup of mozzarella cheese/Cottage cheese 
1 tbsp. of ginger (optional) 
2 tbsp. of chilli flakes
1 tbsp. of salt or to taste
1 tbsp. of oregano
5 tbsp. of cornstarch/cornflour for binding
Oil for deep frying

Recipe:

  • Squeeze all the water from the shredded potatoes and keep it aside. We'll use it after if needed.
  • Add potatoes, ginger and mozzarella/cottage cheese in a mixing bowl.
  • Now add cornflour, salt, chilli flakes and oregano, and mix it well.
  • Mix it with hands for proper binding.
  • Take a little portion and make balls.
  • Now add these potato balls in medium hot oil for frying.
  • Fry them until you achieve golden brown colour.
  • Take them our in a plate.
  • Your quick and easy potato croquettes are ready to be served.
  • Serve them hot with your choice of sauce.
  • Enjoy !

Quick tips:

  1. For frying always keep your flame at medium , otherwise these potato balls won't be cooked from inside.
  2. Do not make size of potato balls too big to save time , this might also leads to undercooked croquettes.
