Veg Manchurian - Gravy


Veg Manchurian is an Indo-Chinese dish of fried veggie balls made in sweet, spicy and tangy sauce. This can be made without gravy as well. Dry Manchurian can be served as starter and Gravy Manchurian can be served as a main course. This goes well with combination of fried rice or Hakka Noodles, whichever way you like.
The recipe for Vegetable Machurian that I'm sharing today is a very simple and tested recipe. It is super easy to make with all the ingredients from your kitchen itself and the results are super tasty.

Cooking time: 20 minutes
Total time: 30 minutes


Ingredients: (serves 4 )

For Vegetable Manchurian balls :

1/4 cup of cabbage 
1/4 cup of cauliflower
1/4 cup of carrots
1-2 green chillies or as you like
4 tbsp of cornstarch or cornflour 
1 tbsp salt or to taste
Oil for deep frying

For Manchurian gravy:

2 tbsp. of oil
1/4 cup of chopped onions
1/4 cup of chopped green pepper (capsicum)
2 tbsp. of garlic
1 tbsp. of ginger
3 tbsp. of ketchup
2 tbsp. of siracha red chillie sauce ( any red/green chillie sauce)
4 tbsp. of soya sauce (5 tbsp. if you are using light soya sauce) 
1/2 tbsp. of vinegar 
1 tbsp. of cornstarch
Spring onions for garnishing

Recipe:

  • Let's make veggie balls first.
  • Put all the veggies in a chopper to chop them very fine or if you don't have chopper then you can use shredder/grater to shred all the veggies.
  • Now add salt , finely chopped green chilles and cornstarch and mix them the veggies.
  • Combine everything together nicely.
  • Cornstarch/cornflour is used for binding of balls.
  • Take a small portion and give them the shape of balls.
  • Now take a pan and add oil into it for frying.
  • Once oil is medium hot , start adding you veggie balls in it carefully.
  • Fry until you get golden brown colour and take them out carefully once done.
  • Put them aside and lets start making gravy next.
  • Add 4 tbsp of water in cornflour , giving it liquid form and keep it aside to use later.
  • Take oil in a pan and add slowly add garlic in it and stir it for 30 seconds.
  • Add onion, green pepper and ginger and saute for 2 minutes or until onions turns pink.
  • Then add ketchup, chillie sauce, soya sauce and vinegar and mix it well.
  • Turn on the stove flame to medium.
  • Now add little cornflour mixture in it.
  • Keep stirring it for 2-3 minutes on a medium flame and add little more water if gravy is too thick.
  • Once gravy is done add balls in it and stir it for 2 minutes.
  • Veg Manchurian is ready , take it out in a bowl.
  • Garnish it with spring onions.
  • Enjoy !

Quick Tips:

  1. You can take veggies available depending on your taste.
  2. Do not over heat the oil for frying or do not fry at high flames or else balls wont get cooked from inside and it will taste raw and mild bitter as well.
  3. Do not add salt in gravy as veggie balls has salt in it and also all the sauces that we are adding also has salt added in it already.
